Salsa Verde Recipe
A superbly versatile sauce, salsa verde is bright and fresh and goes with so many dishes. Drizzle on lamb, pour onto grilled or roast vegetables, pour into a vegetable soup or coat your new potatoes, coat crostini and add mozzarella etc. Just delicious. It’s a popular one in the cookery classes and really easy to make.
Ingredients
1 bunch parsley
1 bunch of basil
1-2 tbsp capers
200ml olive oil
1 tp mustard
1-2 cloves of garlic,
crushed juice
zest of 2 lemons
6-8 anchovies
Translated this means green sauce. Some recipes are chunky, others are pureed, depending on whether you prepare and chop the ingredients by hand or blitz them in a machine.
How to make
Chop the basil, parsley, capers, anchovies and garlic. Beat in the olive oil gradually along with the lemon. You want a thick sauce. Adjust as necessary, adding more lemon, olive garlic etc if you like.
